Spicy Chicken & Peanut Butter Pie

A bold, flavorful twist on comfort food with a signature Thokoman Peanut Butter kick.

Ingredients

• 2 tbsp oil or butter
• 1 onion, chopped
• 2 garlic cloves, minced
• 1–2 tsp fresh ginger (optional)
• 1–2 tsp chili flakes (or fresh chili for extra heat)
• 2 heaped tbsp Thokoman Smooth Peanut Butter
• ½ tsp cumin or coriander (optional)
• ½ cup chicken stock
• 2 cups cooked chicken, shredded
• 1 can mixed vegetables, drained
• Salt and pepper, to taste
• 6–8 sheets phyllo pastry
• Melted butter or oil, for brushing

Method

    1. Preheat the oven to 180°C.
    2. In a pan, sauté onion, garlic, and ginger in oil or butter until fragrant.
    3. Add chili and cook for 1–2 minutes to release the heat.
    4. Stir in Thokoman Smooth Peanut Butter, spices, and chicken stock. Let it bubble and thicken slightly.
    5. Add shredded chicken and vegetables, and season with salt and pepper.
    6. Spoon the filling into an ovenproof dish.
    7. Layer phyllo sheets on top, brushing each sheet with melted butter or oil.
    8. Scrunch the final layer for extra crispiness.
    9. Bake for 20–25 minutes until golden and flaky.
