Spicy Chicken & Peanut Butter Pie
A bold, flavorful twist on comfort food with a signature Thokoman Peanut Butter kick.
Ingredients
• 2 tbsp oil or butter
• 1 onion, chopped
• 2 garlic cloves, minced
• 1–2 tsp fresh ginger (optional)
• 1–2 tsp chili flakes (or fresh chili for extra heat)
• 2 heaped tbsp Thokoman Smooth Peanut Butter
• ½ tsp cumin or coriander (optional)
• ½ cup chicken stock
• 2 cups cooked chicken, shredded
• 1 can mixed vegetables, drained
• Salt and pepper, to taste
• 6–8 sheets phyllo pastry
• Melted butter or oil, for brushing
Method
- Preheat the oven to 180°C.
- In a pan, sauté onion, garlic, and ginger in oil or butter until fragrant.
- Add chili and cook for 1–2 minutes to release the heat.
- Stir in Thokoman Smooth Peanut Butter, spices, and chicken stock. Let it bubble and thicken slightly.
- Add shredded chicken and vegetables, and season with salt and pepper.
- Spoon the filling into an ovenproof dish.
- Layer phyllo sheets on top, brushing each sheet with melted butter or oil.
- Scrunch the final layer for extra crispiness.
- Bake for 20–25 minutes until golden and flaky.
