Crunchy Peanut Butter Chicken Curry

This delicious and hearty peanut butter chicken curry combines the rich, roasted flavour of Thokoman Crunchy Peanut Butter with tender chicken and aromatic spices. Perfect for a family dinner that warms the soul and excites the taste buds!

Ingredients

1 tablespoon vegetable oil
1 large onion, finely chopped
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons red curry paste
400g chicken breast, cut into bite-sized pieces
1 can (400ml) coconut milk
3 tablespoons Thokoman Crunchy Peanut Butter
1 tablespoon soy sauce
1 tablespoon lime juice
1 red bell pepper, sliced
1 carrot, sliced
100g baby spinach
Fresh coriander, for garnish
Salt and pepper to taste
Cooked rice, to serve

Method

Heat oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté until fragrant.
Stir in the red curry paste and cook for another minute.
Add the chicken and cook until browned on all sides.
Pour in the coconut milk and bring to a simmer.
Stir in Thokoman Crunchy Peanut Butter, soy sauce, and lime juice. Mix well.
Add the bell pepper and carrot. Simmer for 15-20 minutes, until the chicken is cooked through and the vegetables are tender.
Stir in the baby spinach and cook until wilted. Season with salt and pepper.
Serve over cooked rice, garnished with fresh coriander.
